Q: I am overjoyed that there is a site for Artichoke lovers. I just got my computer up and running 3 days ago and while I was on-line on day 2, yes, I had an artichoke boiling away behind me. My question is this: I am often diagnosed as anemic. I try to take iron supplements and eat a sensible diet to include red meats (which I love as much as a good 'choke.), but are Artichokes a good source of iron as well as the other vitamins and nutrients that they are rich in?

Artichokes contain around 6 percent the daily value of iron per cup. While they are not one of the top sources of iron, they do provide a variety of necessary minerals and vitamins. One medium artichoke is an excellent source of dietary fiber (10.3 grams) and is an excellent source of vitamin C, as well as a good source of folate and magnesium.
