One of our Artichoke Aficionado members, Jennifer, submitted a fantastic menu, created by her father Syd, that includes delicious Artichoke dip recipes. Jennifer and her family enjoyed the food at a picnic held at Syd’s rustic cabin in Maine. Steve Brown, an extraordinary chef from Beaufort, S.C., joined Syd in the kitchen – preparing a South Carolina “Low Country Boil.” The menu included other traditional Southern items as well as regional ingredients from Maine and fresh Ocean Mist Farms Artichokes from California. Artichokes are perfect for picnics because they can be cooked ahead, eaten at room temperature, and are versatile for serving in halves or quarters for multiple guests.

Syd and Chef Steve’s Menu:

  • Artichokes steamed, served with a choice of two dipping sauces
  • South Carolina “Low Country Boil,” a traditional dish of shrimp, potato, corn and sausage.
  • Maine lobsters
  • New York Cut strip steaks with roasted potatoes
  • Blueberry crumble - in season
  • Strawberry pie - in season
  • Ice cream
  • Sparkling wine

Artichoke Dips

Steve Brown has shared his delicious Artichoke dip recipes. Try them and let us know what you think!

Shrimp and Artichoke Dip

  • Cooked shrimp
  • Fresh Artichoke Hearts, cooked
  • Crusty French bread torn into chunks
  • 1 tablespoon mayonnaise
  • 1 tablespoon cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Garlic clove
Place all in food processor. Chop until chunky. Bake at 350 degrees for 30 minutes.

 

Clam and Artichoke Dip

  • Very fine celery, onion, sautéed with clams in clam juice
  • A touch of white wine
  • Garlic
  • Add fresh Artichoke Hearts, chopped fine
  • Fresh cream
  • Touch of Tabasco
  • Little Worcestershire sauce
  • Pepper to taste
  • To thicken, crush saltines
Mix all and bake until toasty brown.
