Broccoli: Preparation & Handling
|
How to Store |
|
Wrap unwashed Broccoli in plastic wrap or tuck into a plastic bag and store in the vegetable drawer or crisper section of your refrigerator
until ready to use. It will keep for five to seven days, but is best used right away. Wrapped Broccoli can go right into the refrigerator.

| How to Cook |
Broccoli florets are so versatile you can use them as an ingredient in almost any dish, including casseroles, pastas, omelets and even quesadillas!
|
Cooking Broccoli 101: It’s almost never a good idea to boil Broccoli because it all but ruins flavor and texture. Steaming and blanching
are the best methods to preserve the most flavor and nutrition. Whatever the method, don’t overcook!
Microwave: This method preserves the most nutrients and is really easy. Put Broccoli in an inch of water in a microwave-safe dish. Cover tightly
and microwave 5 to 7 minutes (total minutes may vary depending on wattage of microwave, so experiment).
Steaming: A delightful way to cook Broccoli, steaming preserves flavor,
texture and nutrition. Bring 1 to 2 inches of water to a boil in a pan. Arrange florets
evenly in a steamer basket, making sure the water does not seep into the bottom of the
basket. Cover and
steam. Between 3 to 4 minutes should be just about right, but it all depends on your steaming setup. Just make sure you don’t steam
too long, as the florets will get too soft. It’s always best to experiment first with one or two florets to determine the ideal
steaming time.
Blanching: Blanching is a "chef’s secret," so try it! Plunging fresh Broccoli in boiling water for 60 seconds
turns its florets into beautiful bright green, picture-perfect Broccoli. It’s a quick and easy step that will make all the difference in
preserving firmness and flavor when you add the florets to your favorite dishes.
