Shrimp and Mixed Vegetables Tostada

Ingredients ¼ cup of lemon juice
1 clove of garlic
1 tablespoon olive oil
2 cups Onions, chopped
3 medium-sized green jalapeno peppers
2 cups tomatoes, chopped
3 cups Broccoli florets
3 cups Cauliflower florets
1 ½ pound medium-sized Shrimp, de-veined and unshelled
salt and pepper to taste
8-10 tostadas

Directions Blend the lemon juice with garlic; set aside. In a large sauté pan, fry the Onion and green jalapeno peppers in the olive oil for about 4 minutes.
Add the tomatoes and salt and pepper to the mixture, and let it cook for about 5 minutes. Add Broccoli and Cauliflower florets for about 8 minutes.
Pour the lemon juice and garlic mixture into the sauce pan and let it cook through. Add the shrimp and cook for about 4 minutes or until they become pink.
To serve: place the shrimp with mixed vegetables on the tostada.
