Artichoke Nachos

Serves: 4
Ingredients
2 cooked, whole Ocean Mist Artichokes (See "How to Prepare & Cook")
1 can (16 ounces) of vegetarian refried beans, warmed up
2 ounces of cheddar cheese, grated
1 large tomato, chopped
4 Green Onions, chopped
1/2 cup of salsa
1 avocado, cubed
1/2 cup of sour cream
1/4 cup chopped cilantro
1 cup Artichoke guacamole (optional - see Ocean Mist Farms' recipe for Artichoke guacamole)
 
Directions
On a large platter, place cooked Artichoke leaves in a single layer (save Artichoke Hearts stems and bottoms for Artichoke guacamole).

Dab a spoon full of refried beans on each Artichoke leaf and top with cheddar cheese, tomatoes, Green Onions, salsa, sour cream, cilantro, avocado and Artichoke guacamole (optional).

Serve as a healthy snack or as a main course!
