Minted Cauliflower Rice

Minted Cauliflower Rice with Peas

Serves: 6
Ingredients
2 heads of raw Cauliflower (chopped in food processor to resemble grains of rice- see video demo on OMF website under Recipe Video-I Can't Believe It's Not Rice)
4 Green Onions, chopped
1/2 cup chopped, fresh mint leaves
1 cup frozen petite green Peas
1 lemon zest, whole
1 teaspoon of Beau Monde dry seasoning
1 tablespoon garlic salt
1 tablespoon salt free garlic seasoning
black pepper to taste
cooking spray
 
Directions
In large saute pan, over medium high heat, spray pan with cooking spray and add all ingredients except Peas. Saute for about 15 minutes or until Cauliflower is tender and fluffy (do not cover pan when cooking).

When Cauliflower is tender, turn off burner and add frozen Peas to Cauliflower mixture. Let sit for 5 minutes and serve.

Leftovers will warm up in microwave beautifully!
