Pick only the brightest green, evenly shaped and firm bulbs that feel heavy for their size.
Avoid puffy sprouts with black spotting or yellow leaves. Choosing similar-sized sprouts will help in
cooking them evenly.
Stalks: All Brussels Sprouts grow attached on stalks that get to be about
3-feet tall. Some stores carry these stalks and allow you to “pluck” the sprouts off
the stalk yourself.
