Spinach

Americans now eat two pounds of fresh spinach a year on average, according to the U.S. Department of Agriculture. This beautiful, dark-green vegetable is delicious raw, steamed, creamed and pureed. Spinach also shines as an ingredient in soups, salads and quiches and partner wonderfully with other foods like pasta, eggs, fish and cheese.

  • Fresh spinach leaves should have a deep green, uniform color.
  • Pack spinach loosely into a plastic bag and refrigerate to crisp leaves.
  • Spinach is highly perishable and should be used within a week of purchase.
  • Rinse under cold water in a colander, then use a salad spinner or pat leaves dry to remove excess moisture before consuming or using in a recipe.
