1 large head of Cauliflower, rinsed and cut into large florets
1 cup of honey (blackberry honey is a good option)
salt and pepper to taste
6 wooden skewers (soaked in water)
Cook Cauliflower in microwave for 5 minutes or until the florets are crisp/tender. Place four florets on each wooden skewer and spray with cooking spray.
On hot, outdoor grill, place Cauliflower skewers and cook (turning evenly to create a light charring
on the Cauliflower). Brush Cauliflower with honey, salt and pepper to taste. Continue to grill for another minute or two to melt honey into Cauliflower.
