Brussels Sprouts & Split Pea Soup

Serves: 8

Ingredients

2 cups rinsed split Peas
8 cups chicken broth
1 cup cooked ham (diced)
1 fresh Fennel bulb (diced)
4 cups chopped Brussels Sprouts (raw)
1 large Yellow Onion (diced)
2 teaspoons salt
1 cup of celery (diced)
1 cup carrots (diced)
2 tablespoons garlic salt
2 tablespoons salt free garlic & herb seasoning
1 tablespoon herb de provence
2 tablespoons olive oil
1/2 teaspoon liquid smoke


Directions

In large soup pot over medium-high heat add olive oil to pot and add; Fennel, Brussels Sprouts, Onion, Celery, Carrots and seasonings. Cook vegetables until soft and tender.

Add chicken broth, split Peas, liquid smoke and ham to pot. Bring to a boil and reduce heat to a simmer and cook until split peas are soft , about 1 hour.

Serve steaming hot.
