Ingredients
4 cooked & thinly sliced Ocean Mist Baby Artichokes (See video: How to Prepare & Cook Baby Artichokes for a variety of cooking methods)
4 whole wheat pita pocket bread
1 cup grated mozzerella cheese
4 tablespoons prepared pesto
dried red chili flakes
4 tablespoons grated parmesan cheese
cooking spray (olive oil flavored)
Directions
Heat oven or outside covered grill to 450 degrees.
Spray pita bread with cooking spray (both sides).
Spread 1 tablespoon pesto sauce on each pita.
Sprinkle 1/4 cup of mozzerella cheese on each pizza.
Place one sliced Artichoke (four slices) on each pizza.
Sprinkle pizza with chili flakes & 1 tablespoon of grated Parmesan cheese.
Place pizzas directly on oven rack or outside grill rack. Bake for 3-5 minutes until cheese melts and pitas are crispy. Cut each pita pizza into four wedges and serve.
