Artichoke Crab Louie

Ingredients

1 large cooked and cooled Ocean Mist Artichoke cut in half and choke removed (See "How to Prepare & Cook").
2 cups of fresh baby greens
1 six ounce can of drained crab meat
1 tablespoon mayonnaise
2 tablespoons Celery finely chopped
2 tablespoons Green Onion finely chopped
2 tablespoons Parsley finely chopped
1 teaspoon fresh squeezed Lemon juice
salt & pepper to taste
1/2 red Tomato sliced into quarters
2 hard boiled eggs cut into halves
2 Lemon wedges
1/4 cup prepared thousand island dressing


Directions

In small bowl combine the crab, mayonnaise, Celery, Green Onion, Parsley, Lemon juice and salt and pepper to taste. Set aside.

Plate baby greens on platter and place Artichoke halves in the center of the greens. Divide crab mixture between the two Artichoke halves.

Garnish the salad with Tomato slices, hard boiled eggs and Lemon wedges. Serve your favorite thousand island dressing on the side.
