Artichokes in the Crockpot! What a great and delicious idea!

Crock pot Artichokes
|

Ingredients
3 to 4 Ocean Mist Artichokes rinsed and trimmed
(See How to Prepare Artichokes for cooking)
juice from one lemon
4 garlic cloves (slivered)
1/2 teaspoon garlic salt
4 tablespoons olive oil
1/2 cup of white wine (optional)
water (optional: use broth for more flavor)

Spread open petals of each Artichoke for seasoning and to promote faster cooking. Place in crock pot, stem down.
Between petals of each Artichoke add: lemon juice, drizzle 1 tablespoon of olive oil, and sprinkle with garlic salt.
Stuff one clove of garlic (slivered) in between Artichoke leaves of each Artichoke.
Pour ½ cup of white wine in bottom of crock pot, underneath Artichokes.
Fill bottom of crock pot with 2” of water in order to create steam and keep Artichokes moist. Water should only be covering the bottom fourth of the Artichokes.
Set crock pot on high setting and cover with lid.
Cook Time:
X-Large/Jumbo sized Artichokes: Cook for 4 hours.
Medium sized Artichokes: Cook for 3 hours
Let cool before serving.
