A Mexican breakfast favorite made with cauliflower instead of potatoes!

Cauliflower & Soyrizo Scrambler

Ingredients

1 head of Ocean Mist Cauliflower (chopped raw to resemble home fried potatos chunks)
1 teaspoon garlic salt
1 tablespoon dry taco seasoning
6 eggs (lightly scrambled)
1 link of vegetarian chorizo sausage (soyrizo)
cooking spray


Directions

Spray large skillet with cooking spray and over medium-high heat sauté Cauliflower chunks until tender (about 7 minutes and do not cover skillet). Add salt and taco seasoning to fried Cauliflower.

Add vegetarian chorizo sausage and combine over heat to combine with Cauliflower.

Scramble eggs into Cauliflower mixture and cook and stir often until mixture is set. Serve with tortillas.
