Baked Artichoke Leaf Sauce

Ingredients

2 cups of very tender inside leaves from the Ocean Mist Farm's Recipe, Easy Baked Artichokes
1/2 cup extra-virgin olive oil
4 large garlic cloves grated
1 teaspoon sea salt
1/2 teaspoon mined rosemary
1/2 teaspoon minced sage leaves

Heat the olive oil, garlic and a pinch of sea salt in a large skillet over medium-high heat and saute about 1 1/2 minutes until garlic is aromatic (very fragrant) but garlic is not brown. Turn heat to high and add baked Artichoke leaves and the rest of the salt and minced herbs. Saute for about 2 minutes until the leaves start to turn brown at the tips (but do not dry out the leaves).

Scatter the Artichoke leaves on four plates dividing them evenly and place meat, fish or fowl on top of leaves. Drizzle with a little more olive oil and season with salt and pepper to taste.
