Very easy and very low in calories, this soup is great to take along to work or school.

Almost-Instant Cauliflower Soup

Serves: 6

Ingredients

1 head Cauliflower
1 box (32 ounces) vegetable broth
salt and pepper to taste
1/2 teaspoon curry powder, dried basil leaves, chili powder, dried tarragon leaves or Onion powder
1 carton (8 ounces) plain yogurt
shredded cheese (parmesan, cheddar or monterey jack) - optional


Directions

Wash Cauliflower and cut out core. Place in large saucepan. Add broth and seasonings and heat to boiling.

Cover and simmer until Cauliflower is very tender (about 10 minutes). For chunky soup, mash with potato masher. For creamy soup, turn into food processor or blender and blend until smooth.

Add yogurt and stir or blend. Ladle into bowls and top with shredded cheese.

Other Variations:
You can use any of the selection of dried herbs for flavoring. Also, you can substitute the yogurt with half & half or cream for a richer flavor.
