Baked Cardone

Ingredients

1 Cardone Stalk
1 tablespoon heavy cream
Italian cheese- grated


Directions

Clean a whole Cardone
Cut into 3" or 4 " pieces then boil until tender.

On a cookie sheet or baking dish place the cooked pieces on the baking pan.
(place the pieces either up or down)

Pour a small amount of heavy cream (1 tablespoon or to your taste) over each piece.
Next, sprinkle grated Italian cheese over the cream.

Bake in over 375-400 degrees until the cheese melts and a golden brown appear.

Remove from oven and serve.

If you have any of the boiled pieces left after you placed them into the baking pan you can use the remainder and place them in a frying pan with garlic and olive oil. Then serve them over linguine.

I have not made this recipe. Having cooked cardone for 40yrs. one key step is missing. You should(must) devain the stock. This will make it much more tender. A more Italian recipe..role cardone in egg then seasoned flour. Bake in a 350 oven until golden brown.
