Serves: 4

Ingredients

4 cooked Ocean Mist Artichokes hearts
(See Video: How to Cook Artichokes for a variety of cooking methods)
4 ounces grated gruyere cheese
4 ounces sliced and shredded ham
4 teaspoons mustard
½ cup corn flake crumbs
½ cup flour
2 eggs
2 ounces butter

Directions

Slice the cooked Artichoke in half so you have two complete rounds of Artichoke Heart. Mix the ham, cheese and mustard, and stuff the Artichokes, making a sandwich with them.

Next, bread the Artichoke sandwiches by dipping each Artichoke Croque Monsieur in flour, followed by egg and corn flake crumbs (breadcrumbs could be substituted). Crushed cornflakes gave the dish an extra crunchy texture!

Cooking: Heat the butter in a frying pan; lightly brown on each side. Finish in a 350 degree oven for 10 minutes.

Serve cut in half with a roasted tomato sauce.
