Ingredients

4 Ocean Mist Jumbo Artichokes, cooked
(See How to Cook Artichokes for a variety of cooking methods)
4 tablespoons mesquite barbecue seasoning or taco seasoning (dry), low sodium
1/4 teaspoon garlic salt
3 seconds buttered flavor cooking spray, non-fat


Directions

Once campfire or backyard grill is very hot, gently spread the petals of the cooked artichokes and generously spray Artichoke with non-fat cooking spray. Make sure spray gets between petal.

Generously dust each Artichoke with 1 tablespoon of mesquite seasoning followed by garlic salt.

Place cooked Artichokes directly on grill. Turn frequently until outside petals are evenly charred (about 20 minutes).

No need for any dipping sauces with these Artichokes since they have a wonderful smoky flavor.

I prepared these at Fallen Leaf Campground near So. Lake Tahoe. I steamed prior to going camping, and just kept cool until I was ready to use them. Turned out great with requests for the recipe. Used taco seasoning and they were very good. I put them on the grate above the fire and they were fine. If you have a chance, this is a great addition to your camping recipe's.
