Artichoke Crab Louie
A beautiful way to present a whole artichoke!
1 large cooked and cooled Ocean Mist Artichoke, cut in half and choke removed
2 cups fresh baby greens
1 can (6 oz.) drained crab meat
1 Tbsp. mayonnaise
2 Tbsp. Celery finely chopped
2 Tbsp. Green Onion finely chopped
2 Tbsp. Parsley finely chopped
1 tsp. fresh squeezed Lemon juice
Salt & pepper, to taste
½ red Tomato sliced into quarters
2 hard boiled eggs cut into halves
2 Lemon wedges
¼ cup prepared thousand island dressing
- In small bowl combine the crab, mayonnaise, Celery, Green Onion, Parsley, Lemon juice and salt and pepper to taste. Set aside.
- Plate baby greens on platter and place Artichoke halves in the center of the greens. Divide crab mixture between the two Artichoke halves. Garnish the salad with Tomato slices, hard boiled eggs and Lemon wedges. Serve your favorite thousand island dressing on the side.
