Artichoke Panini

A vegetarian sandwich that all will enjoy!

2 cooked Ocean Mist Artichoke hearts, bottoms and stems cut into 4 slices lengthwise

4 slices sourdough bread
1 large Tomato, cut into 6 slices
4 slices low fat mozzarella cheese
8 large fresh basil leaves
olive oil cooking spray
dash of garlic salt, to taste


  1. Divide Artichokes, Tomatoes, basil, and mozzarella between 2 slices of bread. Sprinkle with a dash of garlic salt and top each sandwich with the second slice of bread.
  2. Spray each sandwich with olive oil flavored cooking spray and place sandwiches on a non-stick grill pan that has been also sprayed with cooking spray and heated for 5 minutes over high heat.
  3. Place foiled covered brick on top of sandwiches and grill on each side for three minutes until cheese melts and bread is toasted golden. Cut each sandwich in half and enjoy.
