Artichoke Sauté with Mustard & Chives
Clean-eaters and foodies alike can agree on this dish. Perfect side to any meal!
½ cup chopped natural almonds
3 Tbsp. olive oil, divided
24 Ocean Mist Baby Artichokes, rinsed and trimmed

¼ cup Olive oil
2 Tbsp. Dijon-style mustard
1 Tbsp. lemon juice
¼ cup parsley, chopped
2 Tbsp. chives, finely sliced
½ tsp. salt
¼ tsp. freshly ground white pepper
Directions:How to Prepare & Cook with Baby Artichokes
- Sauté almonds in 1 tablespoon of oil until golden; reserve.
- Quarter prepared Baby Artichokes lengthwise. Sauté Artichokes in butter 10 to 15 minutes or until tender. Add mustard and lemon juice; sauté 1 minute longer.
- Toss with almonds, parsley, chives and remaining 2 tablespoons of oil. Season with salt and pepper.
