4 cooked Ocean Mist Artichoke (Hearts and stem only)

4 large Potatoes, peeled and cubed
1 Tbsp. butter
1 cup vegetable broth (may use chicken broth)
1 tsp. pepper
¼ tsp. salt


  1. In large pot, cover Potatoes with water and bring to a boil over medium high heat. Reduce to simmer and cook until Potatoes are fork tender (about 20 minutes). Drain Potatoes and return to pot.
  2. Microwave butter and broth together until butter melts (about 1 minute). Add Artichokes to Potato pot and gradually add butter and broth while mashing with a Potato masher. Keep adding butter and broth mixture until Potatoes are desired texture. Season with salt and pepper and serve immediately.
