Artichoke Smashed Potatoes
A delicious twist to mashed potatoes

4 cooked Ocean Mist Artichoke (Hearts and stem only)

4 large Potatoes, peeled and cubed
1 Tbsp. butter
1 cup vegetable broth (may use chicken broth)
1 tsp. pepper
¼ tsp. salt
- In large pot, cover Potatoes with water and bring to a boil over medium high heat. Reduce to simmer and cook until Potatoes are fork tender (about 20 minutes). Drain Potatoes and return to pot.
- Microwave butter and broth together until butter melts (about 1 minute). Add Artichokes to Potato pot and gradually add butter and broth while mashing with a Potato masher. Keep adding butter and broth mixture until Potatoes are desired texture. Season with salt and pepper and serve immediately.
