Glad to hear your in the kitchen using leeks, lovely vegetable in their own right, I love them baked in garlic cream with cheesy bread crumbs on top, yum!
Anyway i'd love to help you but your question is a little like "how long is a piece of string?' Leeks come in all sizes from very small to some weighing a pound or 2. At a guess I would say that an average large leek would yield 2 cups once washed and diced.
IT's tough when writing recipes, because of the variables, one needs to be specific yet it is hard to work out some of the variables. Sorry it's not a lot of help,
