Baby Artichoke Tamalitos

A simple version of a popular Mexican tradition.

12 large corn husks, soaked and dried,
6 Ocean Mist Baby Artichokes, cooked and finely diced

½ lb. frozen, white Corn kernels
2 Tbsp. butter
¼ cup heavy cream
1 cup masa de maiz (fine cornmeal)
1 tsp. baking powder
1 tsp. salt
1/8 tsp. pepper
2 Tbsp. sugar
½ tsp. Jalapeno Pepper, minced
½ cup finely shredded white sharp cheddar cheese


  1. In medium pot, over low heat combine: Corn, butter, cream, masa, baking powder, salt, pepper, Jalapeno pepper, sugar and diced Baby Artichokes. Mix thoroughly while heating through.
  2. Put hot mixture in food processor and pulse for 1 minute (scraping down sides of bowl with spatula). Add cheese and mix through.
  3. Place 3 tablespoons of tamale mixture in the center of each soaked and dried corn husk (first overlap the sides then fold the ends under).
  4. Place the tamales in a steamer. Pour boiling hot water into the steaming portion of the pot and cover with lid. Steam tamalitos for 75 minutes.
  5. When tamales are cooked, remove from the pot and let them rest for 15 minutes on a covered dish before serving.
