Ingredients:

1 jumbo choke: Rinsed and trimmed

1 clove garlic

Lemon juice

Olive Oil

Balsamic Vinegar

Foil

Preheated campfire hot coals

Directions:

Trim top and carve out enough space in the center for a garlic clove.

Pour lemon juice, olive oil and balsamic in the heart area and in between the leaves as I could (I separated the leaves some too).

Wrap artichoke in foil as tightly as possible (multiple sheets) and place on hot coals.

Roast for 1 hour.

As a lifelong artichoke lover, I can say this is the ultimate way to enjoy an artichoke. The smokey flavor the 'choke takes on when cooking them this way is both unique and delicious. Add to that, the pure enjoyment factor of tending a hot campfire and stoking the coals to create this outdoor "oven" to roast them in is fantastic! A must try for any enthusiast :)
