Ingredients:

1 head of Ocean Mist Cauliflower (chopped raw to resemble home fried potatos chunks)
1 tsp. garlic salt
1 Tbsp. dry taco seasoning
6 eggs (lightly scrambled)
1 link vegetarian chorizo sausage (soyrizo)
cooking spray

Directions:

  1. Spray large skillet with cooking spray and over medium-high heat sauté Cauliflower chunks until tender (about 7 minutes and do not cover skillet). Add salt and taco seasoning to fried Cauliflower. Add vegetarian chorizo sausage and combine over heat to combine with Cauliflower.
  2. Scramble eggs into Cauliflower mixture and cook and stir often until mixture is set. Serve with tortillas.

Tastes just like the real thing only much lighter! My family ate it up thinking it was papas con chorizo.
