Chef Tony Baker’s Mediterranean Relish

The popular relish he serves with the Fire Roasted Artichoke at Montrio Bistro

Ingredients:

8 cup roasted and peeled eggplant
3 cup roasted and peeled red bell pepper
3 cup roasted and peeled yellow bell pepper
5 cup oven dried or sundried roma tomatoes
1½ cup balsamic vinegar
1 cup chopped Italian parsley
1 cup green pitted olives
1 cup nicoise olives
½ cup peeled garlic

Directions:

Finely chop all ingredients. Combine everything and season to taste
