Slow-Cooker Chicken Cordon Bleu with Artichokes
One of the best Crock Pot recipes ever! Family favorite time and time again!
12 Baby Artichokes , rinsed and trimmed
1 Fennel Bulb (cored and diced)
¼ cup all-purpose flour
1 tsp. dry chicken seasoning
½ tsp. garlic salt
4 skinless boneless chicken breasts (lightly pounded)
4 slices smoked deli ham
4 slices swiss cheese
2 Tbsp. olive oil
4 slices bacon
1 cup white wine
1 cup chicken broth
½ cup of half and half
2 Tbsp. cornstarch
- Combine flour and dry seasonings in resealable plastic food storage bag and shake well. Place flattened chicken on cutting board. Place 1 slice ham and 1 slice cheese on each piece of chicken. Roll chicken up to enclose filling, and secure with toothpick or wooden skewer. Place chicken in bag with seasoned flour, and shake gently to coat each piece. Add bacon to large skillet over medium high heat and cook bacon until crispy.
- Set bacon aside for garnish. Add olive oil to bacon drippings and heat over medium high heat. Add chicken, to hot oil and brown on all sides. Transfer chicken to 4 1/2 quart Crock Pot (slow cooker). Remove skillet from heat and add wine, chicken broth, Artichokes and Fennel. Return skillet to heat, cook and stir to loosen brown bits from bottom of skillet. Pour Artichoke mixture into crock pot, over chicken. Cover Crock Pot and cook on low for 2 hours.
- Remove chicken and Artichokes with slotted spoon. Cover chicken with aluminum foil to keep warm. Mix together half and half and cornstarch in small bowl. Stir half and half mixture into cooking liquid in Crock Pot. Cover Crock Pot and cook on low for 15 minutes until sauce is thickened (if sauce is to thick, thin with extra chicken broth).
- To serve, remove toothpicks from chicken and place chicken and artichokes on plates. Spoon sauce over chicken and serve extra sauce on the the side. Garnish with cooked crumbled bacon (optional).
