Easy Spinach Quiche

This easy quiche can be made a day ahead. Save time without sacrificing flavor!

Ingredients

  • 1 single-pie crust
  • ½ cup chopped white onion (pre-sautéed is best), optional
  • ½ cup chopped, cooked bacon OR diced prosciutto (find pre-diced at Trader Joes-makes it easier to add for flavor), optional
  • 1½ cup cooked Jimmy Dean Skillets (Find this in your freezer section - just heat it up in a pan for 5 mins)
  • 8 beaten eggs
  • ½ cup sour cream
  • ½ cup half & half
  • 3 dashes ground nutmeg
  • 3 cups Ocean Mist Farms Value- Added Spinach
  • 1 cup shredded mozzarella
  • ½ cup Swiss or any Italian blend cheese

Directions

  1. Roll out the pie crust and lay it in your pie tin. Bake crust until golden brown in preheated oven at 450°F
  2. While crust is browning, mix all the other ingredients together in a big bowl. Pour the egg mixture into the hot-browned pie crust. Sprinkle extra cheese on top. Cover quiche with foil. (I remove the foil for the last 15 minutes of baking to let it brown.) Bake quiche at 375°F for about 45-60 minutes, depending on oven.
  3. After 40 minutes, test center of quiche with a knife to see if mixture is “solidifying.” Best to let the cooked quiche stand before serving and let it “set.” Cook a day ahead and it still is just as delicious “re-warmed” in the microwave.
