Hot Artichoke Dip

Hot Artichoke dip is a sure crowd pleaser - it's the perfect appetizer!

Recipe Information

Cook Time: 5 Minutes

Ingredients:

2 cooked Ocean Mist Jumbo Artichokes hearts and stems, chopped

½ cup romano cheese

1/3 cup chopped red Onion

1-3 Tbsp. mayonnaise

¼ cup sour cream

16 1/3-inch thick French bread baguette rounds

Directions:

 

  1. Place artichokes, cheese, and red onion in bowl. Mix in enough mayonnaise and sour cream to form thick spread (thickness and taste to your preference).
  2. Preheat broiler. Top each bread round with bruschetta. Arrange baguette rounds onto baking sheet. Broil until spread is heated through and begins to brown (about 2 minutes).

The recipe says to use the stems and heart of jumbo artichokes but I substituted two regular sized ones for each jumbo. I actually used a total of five regular sized artichokes instead of the two jumbo suggested. Prepared the artichokes per usual and ate the leaves as a separate dish. It is the heart and stem that goes into this dip recipe. Very yummy - I love the leaves (dipping in a mayo and yogurt mix -equal parts - that I use to make it less fattening). So I'm suggesting a way to use the small artichokes and telling you how to use the rest of the plant not needed for the dip!
