Kalettes with Toasted Almonds & Raisins

A great salad with added crunch to curb hunger in a healthy way.

Ingredients:

1-1/2 cups (12 oz.) Ocean Mist Farms Kalettes, washed and trimmed

4 Tbsp. olive oil

1/4 cup Raisins

1/4 cup Sweet wine or apple juice

1/4 cup almonds, sliced

2 Tbsp. rice vinegar, seasoned

Salt

Directions:

  1. Place the raisins in a small microwavable container with wine. Cover and cook for 2 minutes. Leave covered for 1 hour until plump and juicy
  2. In a large bowl, toss Kalettes & almonds with oil and salt. Place Kalettes on a cookie sheet and bake for 7 minutes at 400°F
  3. Toss Kalettes with raisins and rice vinegar. Serve.
