Kori’s Chicken, Fennel & Mushrooms Over Rice
Easy- Quick-Healthy dish that helps you reach your daily vegetable servings.
Thinly sliced chicken breast tenders, seasoned (Salt & Pepper)
1 bag (12 oz._ mushrooms, cleaned and sliced
1 bulb Fennel, thinly sliced
1/4 tsp. garlic, chopped or minced
1 bag instant/microwavable rice (use seasoned rice mixture for added flavor), prepared
Directions:Using Fresh Fennel
- Preheat your BBQ grill to high (350-400°F). Once BBQ is hot, place seasoned chicken breast tenders on grill.
- Rotate and char until cooked thoroughly to 165°F . This will take 10-15 minutes. Remove from grill and slice cooked chicken breast tenders into bite size pieces.
- Preheat a stove-top skillet with olive oil then add the prepared garlic, mushrooms, and fennel. Sauté mixture until tender. This takes approximately 10-15 minutes. On a serving plate, Place the vegetables and chicken over the prepared rice.
