Parmesan & Gruyère Roasted Cauliflower
Parmesan and Gruyère Roasted Cauliflower is the perfect snack or side dish- low in fat and carbs but high in fiber, folate, and vitamin C.
1 large head cauliflower
3 Tbsp. olive oil
1 cup fresh grated Parmesan
1 cup fresh grated Gruyère
Salt and fresh ground black pepper
- Preheat oven to 350°F. Chop cauliflower into florets and discard stems. Place florets on sheet pan. Drizzle with olive oil and sprinkle generously with salt and pepper.
- Toss and bake for 30 minutes, tossing halfway though for even roasting.
- Sprinkle with cheese and bake for 2 minutes. Season to taste.
