Ingredients:

1 large head cauliflower

3 Tbsp. olive oil

1 cup fresh grated Parmesan
1 cup fresh grated Gruyère

Salt and fresh ground black pepper

Directions:

  1. Preheat oven to 350°F. Chop cauliflower into florets and discard stems. Place florets on sheet pan. Drizzle with olive oil and sprinkle generously with salt and pepper.
  2. Toss and bake for 30 minutes, tossing halfway though for even roasting.
  3. Sprinkle with cheese and bake for 2 minutes. Season to taste.

Love this recipe. Super easy and delicious. This is the best way to make cauliflower. Full of flavor and nice texture; soft but crunchy at the same time. This is a healthy snack and a good side dish to substitute for a normally high carb side dish.
