Penne Pasta with Artichokes, Prosciutto & Peas
Another Italian Favorite! Penne pasta, Artichokes, prosciutto and peas make a great combo.
6 Ocean Mist Medium Artichokes Hearts, cooked

3 cups red Onions, thin-sliced
3 cups Mushrooms, sliced
2 cups fresh Peas, shelled
2 cups (1-inch pieces) fresh Asparagus
½ cup prosciutto, chopped
½ cup olive oil
½ cup fresh lemon juice
1-½ Tbsp. garlic, minced
1 tsp. chopped fresh thyme
2 lb. penne pasta, cooked
1-½ cup white wine
Fresh grated parmesan cheese
- Cut Artichoke Heart into thin slices. Heat the olive oil in a large skillet. Add cooked, sliced Artichoke Hearts, vegetables, prosciutto, lemon juice, garlic and thyme. Sauté over medium-high heat until vegetables are crisp-tender (about 6 to 8 minutes).
- Add wine; cook and stir until liquid is slightly reduced. Toss vegetable mixture with pasta, parmesan and parsley. Serve immediately.
