Raw Artichoke Salad
Unique & Delicious. This salad is best served when made with a loaf of good Italian bread!
1 large Ocean Mist Artichoke
1 Tbsp. fresh chopped dill
½ cup pitted Greek olives, halved
1 can (15 oz.) garbanzo beans, rinsed and drained
2 Tbsp. olive oil
Juice from ½ of a fresh lemon
3 Green Onions, chopped
Dash of salt
Fresh cracked black pepper, to taste
To prepare Artichoke:
- Remove outer leaves until you reach the tender very pale leaves. Trim the stem to about one inch and thinly slice the Artichoke Heart, stem and bottom. Remove the thistle from the Heart and immediately place thin slices of raw Artichoke in a bowl of lemon water until ready to use.
To prepare salad:
- In a salad bowl, toss all the ingredients together and chill until ready to serve.
