Another delicious way to stuff an Artichoke! This is perfect as a side dish or appetizer.
4 medium to large Ocean Mist Farms Artichokes, cooked

2 tablespoons lemon juice or white wine vinegar
1 cup ricotta cheese
½ cup shredded parmesan cheese, divided
¼ cup chopped fresh basil or 1 tablespoon dried basil
¼ tsp. freshly ground pepper
Olive oil, salt and pepper to taste
Combine ricotta, ¼ cup Parmesan, egg, basil and 1/4 teaspoon pepper in a medium bowl. Cut Artichokes in half and remove fuzzy center with a spoon and discard. Brush cut surfaces with olive oil and sprinkle with salt and pepper to taste. Spoon ricotta mixture into Artichoke halves. Sprinkle with remaining Parmesan. Return to oven until tops are lightly browned (about 15-20 minutes). Makes 4 servings.
