Roasted Baby Artichokes

A wonderful way to cook Baby Artichokes - the high heat browns them and deepens its rich, nutty sweetness.

Roasted Baby Artichokes

16-24 Ocean Mist Baby Artichokes, rinsed & trimmed

1 lemon, sliced
½ cup olive oil
Salt and pepper, to taste


Couscous (Optional)

1 package couscous

¼ cup sliced Green Onions

¼ cup chopped red pepper or sun-dried tomatoes



How to Prepare & Cook with Baby Artichokes

Drop prepared Baby Artichokes into large saucepan or pot of boiling salted water along with lemon slices; boil 5 minutes. Drain Baby Artichokes well. Toss Baby Artichokes and lemon slice with olive oil and salt and pepper, and arrange in a single layer on a roasting pan or baking sheet. Roast in preheated 450°F oven until tender (about 8 to 10 minutes), stirring once.

Roasted Baby Artichokes with Couscous:
Prepare enough couscous for 4 to 6 servings, following package directions. Stir in roasted Baby Artichokes and lemon slices along with green onions and chopped red pepper or sun-dried tomatoes.
