Slow-Cooker Artichoke & Beef Short Rib Cassoulet

12 Baby Artichokes, rinsed and trimmed
1 Leek (chopped)
1 Fennel bulb (cored and diced)
1 lb. dried white beans such as great northern
Boiling water to cover beans
1 Tbsp. butter
1 Tbsp. olive oil
3-4 lbs. boneless short ribs
3 cups beef broth or french onion soup
4 oz. bacon or pancetta, diced
2 tsp.minced garlic
1 sprig of tyme or 1 Tbsp. dried tyme
1 Tbsp. herbs de provence
4 whole cloves
salt and pepper to taste
- Rinse and sort beans and place in a large bowl: cover completely with water. Soak overnight. Drain beans and discard water.
- Heat butter and oil in large skillet over medium-high heat until hot. Sear beef ribs on all sides until browned.
- Transfer ribs to 4-½ quart crock pot, slow cooker. Add broth, bacon, vegetables, herbs and spices to the crock pot. Add enough water to cover beans, if needed. Cover and cook on low setting for 8 hours. After 4 hours check liquid and add boiling water as needed to barely cover beans.
- Before serving, season with salt and pepper. (do not add salt to beans while cooking or the beans will not get tender).
