Stuffed Pork Chops with Kalettes™ & Rice

Ingredients:

1 cup Kalettes™, rinsed and chopped

1 cup rice, cooked (for quick serving, use prepackaged rice cooked in microwave for 90 seconds)

2 Thick-cut fresh pork chops

Olive oil

Salt and pepper to taste

Directions:

  1. Preheat oven to 375°F. Cook rice -your preferred method Then mix Kalettes™ in with rice.
  2. “Butterfly cut” both pork chops. Salt/Pepper outside.
  3. In very hot skillet with olive oil, brown each side of pork chops 2 minutes on each side. Take chops off heat and stuff with rice/Kalette mixture.
  4. Place stuffed pork chops in greased roasting pan. Cook at 375°F for 30-40 minutes until core temperature reaches 165°F.
