A convenient dish that can be made ahead for entertaining! Keeps well refrigerated!
¾ cup fine bulgur wheat
1 English cucumber (or 2 regular),diced small (peeling optional)
1-2 tomatoes, diced small with liquid squeezed out
1 bunch of Green Onions, minced
1 large bunch of Italian flat leaf parsley, chopped
½ bunch of fresh mint, chopped
Juice of 1-½ lemons
Zest of 1/2 lemon
1 Tbsp. extra virgin olive oil
Salt and pepper, to taste
¼ tsp. fresh nutmeg
A pinch of cinnamon
- Rinse the Bulgur in a fine-mesh sieve; drain well. Combine all ingredients in a large bowl; mix thoroughly. Taste to adjust seasonings. Refrigerate at least one hour before serving to allow flavors to marry. Keeps great for 3-5 days refrigerated.
