Toasted Green Onion & Artichoke Spread
A great spread for all of the Artichoke lovers!
1 ¼ cup thinly sliced green onions, divided (about 10 green onions)
1 ½ Tbsp. vegetable or canola oil
1 jar (14.75 oz.) marinated artichoke hearts, drained
1 package (8 oz.) cream cheese
½ cup mayonnaise (Best Foods Brand preferred)
- Heat a small pan on high heat and add the oil. Once the oil is very hot, add 1 cup of thinly sliced green onions and salt. Cook until the green onions become fragrant and lightly browned. Transfer the toasted green onions to a plate and set aside to cool to room temperature.
- In a food processor, blend together the cream cheese and mayonnaise until fully combined and smooth. Now add the drained marinated artichokes and toasted green onions into the food processor and pulse about 10 times, or until the artichokes are small but chunky.
- Remove the spread from the food processor and place into a serving bowl. Garnish with the remaining ¼ cup of uncooked green onions.
- Serve with crackers, bread, crostini, raw vegetables or on sandwiches.
