Christmas Breakfast

Christmas breakfast has always been a special part of Christmas Day.  The presents have been opened and the excitement of the morning is settling down into a quiet contentment. 

Whatever the breakfast menu might be each year, it always involves lots of fresh fruits and veggies.  Fresh adds the flavor and satisfaction for this cozy meal. And like many activities this time of year, advance preparation keeps the home running smoothly and the family happy. For this reason,  I like the advance prep and simple ease of a casserole. There are lots of meals and special dishes to prepare for the big day, so keeping it simple is key.

I am loving my cast iron skillet, a kitchen tool that has sat dormant for far too many years. I knew I had to have one years ago, but am just now figuring out how to really use it! This year, I'm planning to try Ocean Mist Farms' Field to Table Skillet Breakfast filled with artichokes, fennel, onions, bell pepper and more!

Field to Table Skillet Breakfast

With a prep time of 15 minutes, it's an easy, veggie-packed dish to throw together that I know won't take a ton of effort for the flavor it promises.  It's also nice because it will serve 6 - 8 people, translation 2 adults and 2 hungry home from college teenagers who are aching for a home cooked meal.
