Comfort Foods

Good ole' fashioned comfort food is a favorite of mine, like many. Something about a warm, familiar dish just soothes the rough edges of a long day. Everyone has a different idea of what comfort foods hit the spot. Maybe you are a chicken & waffles kind of person or love a plate full of rich, tomato-y pasta. There's really no wrong answer for what dishes make the comfort category. Today, I'm sharing four super unique recipes that I know will bring a little comfort to your dinner table this week. 

Pesto Broccoli and Cauliflower with Gnocchi

In my household, nothing says comfort like...PASTA!  For those of you who aren't familiar, Gnocchi straddles the line between pasta and dumpling. It is used in many traditional Italian meals and is made up of mostly flour, eggs, and potatoes. I've made it from scratch and bought both frozen and dry, so you have options here. But, if you are a texture person, this is for you! Paired with beautifully cooked Broccoli and Cauliflower and a rich pesto sauce, this meal will bring your taste buds right to the coast of Italy.

Easy Cauliflower Mac and Cheese

Any mac and cheese fans out there? I think it's safe to say this dish is a comfort food fallback for many of us. However, this version has a deliciously deceiving twist which means much fewer carbs than your average mac and cheese. The pasta is supplemented with fresh steamed cauliflower for a nutrient boost that maintains the traditional flavor profile that you grew up with. Italian Artichokes

A favorite with all artichoke lovers, these Italian Artichokes are even more beloved with the Instant Pot. I often share on this blog what a big fan of the Instant Pot I am - especially for simplified artichoke prep. With the push of a few buttons, you get a perfectly cooked Artichoke every time. This recipe only has a few main ingredients, making it exceptionally easy to make with limited meal prep time so that you can get to that comfort food experience quickly.



Easy Oven-Roasted Pork and Artichoke Chili Verde

When I think of comfort foods, soups are always at the top of the list. There's something about a piping hot bowl of rich broth that immediately calms the day's stresses away, and any roasted pork dish checks all the boxes in the comfort food category. Easy Oven-Roasted Pork and Artichoke Chili Verde contains the best of both worlds.  The warm savory broth is loaded with flavorful Ocean Mist Farms Artichoke hearts and pulled pork.
