Easter week is officially here; can you believe it? A weekend of family and friends and great food is upon us and I am very much looking forward to the delicious spread of veggies that I know I will get to enjoy this weekend. Easter has been difficult these last few years but many of us are jumping back in the saddle this year. Without fail, my family enjoys simply steamed artichokes down the table with a variety of dipping sauce selections. With that, I have selected some delicious Easter-inspired recipes that are perfect for making at home or enjoying with loved ones. I will be trying some of these this year, you should too!
Sheet Pan Roasted Sausage, Purple Artichokes, & Potatoes
This delicious, quick, and easy sheet pan recipe with roasted sausage, purple Artichokes, and potatoes is perfect for your Easter festivities. You can use less space and dirty fewer dishes by throwing all your ingredients together and baking them. This also brings out the best possible taste. Something about Brussels Sprouts and bacon just makes everyone happy. It is the perfect side dish whether you are making a pasta dish, a soup/gumbo, or even barbequing outside. Talk about delicious!
Cauliflower- Coconut Egg Custard Pie
I have saved the best for last. Dessert of course! You won't even believe that Cauliflower is the main ingredient in this decadent dessert. This is perfect for the Easter holiday because it is bright and fun and best of all, it tastes delicious. Make this the day ahead and store it in your refrigerator overnight! This recipe is also vegetarian-friendly and serves at least 8 people.
