Easy Back-to-School Cauliflower Mac-n-Cheese

Two weeks ago I had the pleasure of visiting my daughter Jill and her family.   It just so happened that school was starting the day that I flew into their hometown.

My daughter is a great mom, but she really amazed me during my visit. Her husband was away on a week-long business trip and she was single-handedly holding down the fort with four boys ages 14, 11, 5 and 2 ½!  Needless to say her home was filled with the sights, smells and sounds of back-to-school organized chaos.

I've heard so many families say that cooking fresh adds to the already hectic weeknight schedule, but Jill really proved that theory wrong.  Many of her evening meals were made when the big boys were in school and the 2 year old was napping. I witnessed her whip up these meals in less then an hour and unlike me, cooking is NOT her passion!

Cauliflower Crumbles

A recipe that I developed for nights just like these, and that has become a family favorite, is my Easy Cauliflower Mac & Cheese.  I always make plenty of this recipe because leftovers can be warmed the next day in the microwave and put into a wide mouth thermos for a welcomed hot lunch at school.

A word of caution, make sure that no little ones watch you make this dish because the secret ingredient may throw them off at first, but after the first bite you will have thumbs up from even the pickiest eater!
