If that title doesn't hook you, I don't know what will. Today is all about two of my favorite things: cheesy recipes that are easy to make. I have almost committed them to memory by now, because sometimes there's nothing I'd rather whip up at the end of a long day than something that is both comforting and requires little energy.

The first in our line-up is this Fall Fennel, Apple and Cheddar Cheese Panini. To be completely honest, it's really just a super grown-up grilled cheese, which is exactly why I love it. After all, it takes me back to when I was growing up and when my kids were growing up. Now with the Fall Fennel, Apple and Cheddar Cheese Panini, we have a dressed-up version of the classic with even more flavor and an added crunch from the apple and fennel!
Savory Artichoke Parmesan Muffins
Next are these Savory Artichoke Parmesan Muffins. If you've never tried a savory muffin, you are in for a treat. Think moist, dense texture of a classic muffin with the flavor of a garlic knot! Serve them alongside eggs and bacon for brunch or in place of the traditional dinner roll.
Spinach & Sausage Cheesy Enchiladas
Finally, these Spinach & Sausage Cheesy Enchiladas are a make-ahead marvel. Because they take a little more prep time than the others, I often prepare them in advance up until the baking step and refrigerate until we're ready to eat. When I get home from work, I just pop them in the oven and have them ready in under 30 minutes. Plus, leftovers make for a wonderful lunch the next day!
