Easy Meals for the End of School Year Madness
When my kids were in school, it seemed like May was always jam-packed with end of the year festivities. Between the parties, award ceremonies, studying for finals, and graduations to attend, the calendar filled up fast. With all that excitement came very little time to think about dinner, but it was still important to me to have our family gather around the table and catch up on everything that was going on.
Over the years, I developed a list of go-to meals that I could whip up during these busy seasons, and always loved when friends would share their favorite quick dinner ideas. So for all you busy moms out there juggling a little extra right now, I'm sharing a few tried and true recipes to help relieve some of your dinnertime stress.
By now you probably know that I'm a big fan of Instant Pot and slow-cooker meals. In fact, I just used both this weekend! I can throw all the ingredients in, set a timer, and use the cooking time to wrap up my lingering to-do list for the day. Try this twist on a classic with our Chicken, Cauliflower, & Rice Slow-Cooker Casserole.
And what is better than a quick, comforting bowl of pasta? Penne Pasta with Brussels Sprouts and Bacon or Lacinato Kale & Fennel Pasta Primavera are two ways to incorporate some veggies for an indulgence you can feel good about.
An easy dinner means minimal dishes to clean, which is why one-pan recipes are another great solution for a busy weeknight. Try our Pork-Fried Cauliflower Rice that can be made in under 30 minutes, or this One Pot Turkey Spinach Artichoke Hash that can be done in even less time thanks to our Season and Steam Artichokes. Learn about our steam in a bag artichokes here.
I hope these recipes makes your final weeks of the school year a little more stress-free so you can spend more time enjoying family time and festivities. Summer will be here before we know it!
