Fall Family Favorites

This is that special time of year when I begin pulling out my favorite family recipes for the upcoming holidays.  We all have them!  Maybe it’s grandma’s sausage stuffing recipe or the pumpkin muffins that your mom made every Halloween.  Whatever it may be, it’s fun to pass down those wonderful flavors and memories from one generation to the next.

For me, creating new dishes to share with friends and family is just as fun.  These last few weeks I have been in the kitchen concocting so many new recipes that are healing for the body, and that also taste amazing!  The one I want to share with you today is a salad that is so delicious and easy that it will definitely become a family fall favorite for the holidays, as well as any weekday meal.  It is a healthy spin-off from the traditional Caesar Salad.  I add Ocean Mist Farm’s fresh shaved Brussels sprouts to the chopped Romaine hearts, and for that fall twist I add fresh, ripe pears and dried cranberries!

My heart healthy dressing is a simple mixture of Extra Virgin olive oil, a splash of fruit juice such as orange, pomegranate or apple, a splash of your favorite vinegar and any fresh herbs from the garden such as rosemary, sage and oregano. Dried Herbs de’Provence is also a delicious addition to the dressing if you don’t have fresh herbs on hand.

Finish the salad with a generous hand full of freshly grated Parmesan cheese and raw pumpkin seeds. Toss and enjoy!

I am making this simple salad for dinner tonight to go with grilled wild Salmon from the Pacific Northwest and a hearty sweet potato and roasted garlic mash, yummy!!  Healthy never tasted so good and it always starts with Ocean Mist Farm’s fresh produce!
