At the end of a long day, a nice relaxing meal is always in order.  But if you're like me, you need the comfort of a home-cooked meal without a lot of hassle.  My Instant Pot has been a life-saver so many nights when I needed the best of both worlds - home-cooked and quick & easy.  Today I'm sharing a few Instant Pot meals that have become a regular in my weeknight dinner rotation.
