Instant Dinners for Busy Weeknights

At the end of a long day, a nice relaxing meal is always in order.  But if you're like me, you need the comfort of a home-cooked meal without a lot of hassle.  My Instant Pot has been a life-saver so many nights when I needed the best of both worlds - home-cooked and quick & easy.  Today I'm sharing a few Instant Pot meals that have become a regular in my weeknight dinner rotation.

This Stuffed Chicken Breast with Artichoke and Cherry Tomato Sauce delivers a bowl of rich flavor and hearty goodness in under 30 minutes that you can't pass up. For the carb lovers in your family, the whole dish is great served over a bed of jasmine or white rice.

While we're enjoying the fantastic flavor pairing of artichokes and tomatoes, let me share one of my family's personal favorites - Italian Artichokes.  In this classic Italian artichoke dish, six simple ingredients come together for a heavenly combination.  And now that I can save time using my Instant Pot, we're loving them even more!

With this next recipe, you'll totally be stepping up your weeknight dinner game with this 30 minute Instant Pot meal.  Baby Artichoke Risotto may sound like something reserved for weekends only, but with the Instant Pot, it's a breeze to pull off an amazing bowl of rich flavor filled with tender baby artichoke hearts.

During the week, my dinner motto is always "Fast and Flavorful".  I hope you and your family enjoy the recipes shared here that can definitely be described as both fast and flavorful!

Growing up on California's central coast, I enjoyed delicious artichokes around the family dinner table and always on Christmas Eve! It is beyond perfection that I now market artichokes for a living and get to share the Ocean Mist Farms story and my love of all things fresh.
